Paneer Vegetarian Chili

Ingredients:
1 350g pkg Tre Stelle® Paneer Cheese, cut into ½” cubes 3 tbsp olive oil 1 onion, peeled and chopped 4 cloves garlic, peeled and minced 2 carrots, peeled and cut into ¼” cubes 1 stalk celery, cut into ¼” cubes 1 sweet potato, peeled and cut into ¼” cubes 2 red peppers, cut into 1/4 “ cubes 1 540 mL can diced tomatoes 1 cup tomato sauce 1 540 mL can black beans, rinsed and drained 1 tbsp chili powder 1 tsp ground cumin 1 ½ cups water salt and freshly ground black pepper to taste Garnish freshly chopped cilantro and sour cream or Greek yogurt (optional)
Instructions:
Add olive oil to a large saucepan over medium-high heat: sauté onion, garlic, carrot, celery, sweet potato and red peppers until vegetables begin to soften; approximately 10 minutes. Add Paneer and continue to sauté for an additional 5 minutes. Add tomatoes, tomato sauce, black beans, chili powder, cumin and water; cover and simmer for 15 minutes or until vegetables are soft.
