Chunky Hummus-style Tre Stelle® Feta Dip
This is where chickpeas meet feta for a irresistible union of flavours. A good source of protein and kid-friendly too!

Makes approximately 3 cups
Ingredients:
2 garlic cloves, minced 1 can | 540 mL garbanzo beans (chickpeas), drained & rinsed 1/3 cup | 75 mL freshly squeezed lemon juice 1/4 cup | 60 mL fresh parsley, rinsed and coarsely chopped 1/2 cup | 125 mL olive oil 1/2 tsp | 2 mL salt 1 cup | 250 mL Tre Stelle® Feta Cheese, broken into crumbles Toasted pine nuts and chopped parsley for garnish (optional)
Instructions:
In a food processor, combine the garlic, garbanzo beans, lemon juice, parsley and olive oil. Process until smooth. Add salt, starting with a quarter teaspoon and taste. Stir in crumbled Feta Cheese. Spoon into serving dish and sprinkle with pine nuts and additional parsley, if desired. Serve with rinsed and trimmed in-season vegetables.
