Cherry Chocolate Tre Stelle® Mascarpone Parfait

Ingredients:
1 can | 398 mL pitted Bing cherries, drained,juice reserved 1 tbsp | 15 mL all purpose flour 1/4 cup | 50 mL orange liqueur 1 cup | 250 mL Tre Stelle® Mascarpone 1/2 cup | 125 mL brown sugar 1/2 cup | 125 mL confectioners sugar 1/2 cup | 125 mL cocoa powder 2 tsp | 10 mL vanilla extract 2 cups | 500 mL whipping cream, whipped 1 package | 375 mL amaretti cookies, crumbled to make 1 1/2 cups
Instructions:
In a small saucepan mix together reserved cherry juice, all purpose flour and orange liqueur. Cook on medium/low heat until mixture begins to thicken – approximately 5 - 7 minutes. Remove from heat; allow to cool; add cherries and refrigerate. In a medium bowl, combine Mascarpone, brown sugar and confectioners sugar; beat with an electric mixture on medium speed until smooth and creamy. Carefully add cocoa powder and vanilla; continue beating until combined. Gently fold in whipped cream. Spoon mixture into parfait cups alternating layers with Bing cherries and amaretti cookies. Refrigerate until ready to serve.
